Hello, Hello Friends/ Kaibigan/ Kababayan!
I miss Cebu’s Lechon. Since, no one here in SG sells Lechon, I had to make my own version. The recipe is based on my childhood recollection. Back in Cebu where I grew up, our neighbor used to make Lechon. While they were preparing the Lechon, I just stand at one corner – observing. My Uncle Maning was task to cook the Lechon. Every 30mins, my Uncle lifts the Lechon to let the juices drip. While watching how my uncle cooked the Lechon, I also helped catch the Lechon juice. As I can remember, I was very happy although I did not have the chance to eat the Lechon but I had the Lechon juice. I poured it on top of my hot rice and boy it tasted so good.
