Hi guys! I have here a very easy and simple dish yet delicious. Filipinos love Adobo. There are a variety of this dish. There’s chicken adobo, pork adobo, adobong pusit and etc. Filipinos from different parts of the Philippines have their own version of Adobo but the main ingredients that are always present are soy sauce and vinegar.
Some of my Visayan friends, their Adobo is different too. They marinade the meat and fry it. They discard the sauce but still they call it Adobo. It was then I realized that Adobo can also be dry or with sauce.

- 1/2kg Chicken Wings (Any parts is fine too)
- 3 tablespoons Soy Sauce
- 2 tablespoons White Vinegar
- 1 tablespoon Brown Sugar
- 1/4 teaspoon Black Pepper
- 5 cloves Garlic, crushed
- 1/4 teaspoon Vetsin (optional)
- 1 1/2 cup water
- 1 tablespoon Oil for frying
|Combine all ingredients in a clean bowl except for the water and oil.|
|You may opt to marinade it overnight or for 30 minutes before cooking. You can also cook this dish immediately. Arrange chicken in a pan. Save the marinade for later.|
|Add water. In medium heat, let it boil and cook until remaining water is about 1/4cup. Don't forget to turn chicken every now and then|
|Add the marinade that we set aside. Let it boil until sauce becomes thick about 2mins. Remove and transfer to a clean plate.|
|Add oil. Set heat to lowest. Continue cooking the chicken until the sauce is dissolved. Turn chicken every now and then. This will take about 3-5 mins.|
|Serve chicken together with the sauce. Best eaten with hot rice. Enjoy!|
