Tortang Talong (Eggplant Omelette)

Tortang Talong or Eggplant Omelette – A super easy recipe and you can cook it the simplest way or go all out. You can add tomatoes, onions, green pepper and ground pork into it. The eggplants are grilled, be it on top of a stove or using charcoal. You’ll know that it’s done once it becomes soft. The skin are removed and flatten the eggplant. Just from the name of it, obviously we use egg for this dish. We soaked the grilled eggplant in egg mixture then we fry it until golden brown on each sides.

Whenever, I cook and eat Tortang Talong, it always give me that “homelike feeling”.  It is good to eat this while its hot, some would pair it with ketchup. Definitely best serve with hot rice.

Tortang Talong


  • 2 Medium Eggplant
  • 2 pieces eggs (scrambled)
  • 1/4 teaspoon black pepper
  • 1 teaspoon favorite seasoning (I used Magic Sarap)
  • 1/4-1/2 cup Oil (for frying)


Step 1
Grill eggplant until soft to the touch.
Step 2
Remove skin and flatten eggplant
Step 3
Crack 2 eggs. Add black pepper and seasoning. Mix.
Step 4
Soak eggplant in the egg mixture. (Optional: add tomatoes, onions and groundpork)
Step 5
In a medium heat, add oil to the pan and fry the eggplant until golden brown on both sides.
Step 6
Let the oil drip or use kitchen towel to remove excess oil. Best serve with hot rice. You may pair it with ketchup too.
