Sotanghon Soup with Meatballs

It’s rainy season here in the Philippines. It’s time to share some soup recipes. This recipe is a simple one. There are different versions of Sotanghon soup. We also have the Chicken Sotanghon Soup. I will share that recipe in the near future. The recipe I’m about to share is with meatballs or bola-bola instead of chicken. The main ingredients to this comfort dish is glass noodles and meatballs. You may noticed that in most of my dishes, I used broth cubes. Please feel free using your own chicken stock or broth.

Sotanghon Soup with Meatballs

Ingredients

  • 4 cloves garlic, crushed (sliced thinly)
  • 1 Medium onion (sliced)
  • 1/2 cup carrots (julienned)
  • 4 thin slices red pepper
  • 2-3 pieces Chinese Cabbage Leaves
  • 1 piece Beef broth cubes
  • 1/4kg Lean minced pork
  • 1 1/2 teaspoon seasoning (I used small pack Magic Sarap Seasoning)
  • 1/2 teaspoon Black pepper for the minced pork
  • 1/2 teaspoon Black pepper for seasoning the soup
  • 1 1/2 teaspoon cornstarch
  • 3 tablespoons cooking oil
  • 4 cups water
  • 2 stalks spring onions as garnish

Directions

Step 1
Add seasoning to minced pork. Mix.
Step 2
Add cornstarch and continue mixing. Set aside for a few mins.
Step 3
Turn on heat to medium. Saute garlic and onion for a minute.
Step 4
Add carrots and saute for another 2 mins.
Step 5
Add red pepper and cook for 1 minute.
Step 6
Add water and let it boil.
Step 7
While waiting for the soup to boil. Form minced pork into balls.
Step 8
Add meatballs to boiling soup. Drop them gently.
Step 9
Let it boil for 3-5 mins. Then add glass noodles (Sotanghon)
Step 10
Once Sotanghon turns clear in color, using a clean scissors cut it in half.
Step 11
Add Chinese cabbage and cook for 1 minute.
Step 12
Add black pepper powder. Garnish it with spring onions and you're done.
Step 13
Enjoy this healthy delicious soup. You can eat it as is or with rice.
